WHAT YOU’LL NEED
For four burger patty:
1 egg
1 teaspoon English mustard
1 teaspoon Worcester sauce
1 small onion/shallot
1 garlic clove
Salt pepper
1lb of beef
For the relish:
2 diced tomatoes
1 tablespoon caster sugar
Teaspoon parsley
1/2 shallot
1/2 pepper diced
1 teaspoon teriyaki sauce
WHAT TO DO
BURGER
Method – fry off shallot and pepper with a little oil and add to the other ingredients. Mix well and season to taste.
This is enough for four patties – fry off a small part of the mix first to taste, refining as needed.
Make into patties and fry for around five minutes each side – start off on a high heat, reducing to a medium one after both sides seared.
RELISH
This is an easy, all-in-one method – add all the ingredients in a bowl, and toss together. Season to taste.
PLATING UP
Take a brioche bun and place face down in the frying pan to soak up the excess juices from frying the patties.
Slather a good spread of mayonnaise on the bun then layer with crisp, fresh lettuce, tomato, pickles (gherkins) and if you have time, an onion ring.
Add your burger and top with a good dollop of the relish.
